The Air Fryer

The air fryer is just such a useful tool for producing a relatively quick meal without messing up your cooktop with flying fat. Just remember to open the fryer basket to check the food for doneness every once in a while, an occasional shake helps. Remember to flip things over, as well.

 

Air Fryer Chicken Thighs

A really simple recipe for 2 that you can serve up oh so fast!
• Prep time: 3-5 minutes.
• Cooking time: approx. 12-18 minutes (depending on size & whether the thighs are frozen or not).

 

Ingredients
1. 4 chicken thighs, with bone and skin
2. ½ lemon, just to dampen the chicken
3. ½ to 1 tsp Montreal Spice (quite salty, so be careful)
4. ½ teaspoon dried herbs , such as herbes de Provence, dried oregano or basil
5. A light sprinkle of red chili flakes (if you like spicy chicken)
6. No fat needed but a few drops of olive oil on both sides can replace the lemon juice (if you don’t like lemon)

 

Instructions
1. Pre-heat the air fryer to 400°F for 2-3 minutes depending on the power of your air fryer.
2. Dampen the chicken lightly with the juice of 1/2 of the lemon or a few drops of olive oil, then lightly season with your choice of herbs, on both sides.
3. Rub (or tap with the flat of a knife) the seasoning well all over the chicken then transfer to the pre-heated air fryer, skin side down.
4. Air fry 400F 6 – 8 minutes on each side, depending on the size of the thighs, until golden and crispy and cooked through in the center.

Notes
• I like to season the chicken up to an hour before cooking in order to let the spices be somewhat absorbed.
• If you don’t have Montreal Spice, try a combination of spices of your choice or a mix of salt, pepper, garlic & onion powder & dried basil.
• Actually, the choices of the seasoning are just endless.
• You can even cook frozen thighs. It just takes 2-4 minutes longer.

To serve
• Sautéed broccoli or Brussel sprouts in cool weather or in the summer, with either a green or bean salad – two recipes that can be found here:

• Great served in any weather with a Pilaf/Pulao made with basmati rice cooked with red lentils & your choice of herbs (takes 20 minutes on a very low simmer).
