Quick & simple & excellent for brunch or as a side for our Air Fryer Chicken. Delicious!

Ingredients
Salad for 2
- 1/2cup Strawberries, sliced, per person
- 1/2cup Grape tomatoes, halved or quartered, per person
- I sliced avocado (perfectly ripe, of course!)
- 1/4cup thinly sliced onion
Vinaigrette
- 1/4cup oil (olive?)
- 1/8cup Balsamic vinegar
- 1/2teaspoon sugar
- 1/4teaspoon each of Basil & Oregano
- 1/4teaspoon mustard (Dijon)
- 1garlic clove, grated or chopped
- salt & pepper to taste (+ a pinch of red pepper flakes for those who like a little hit of hot)
Method:
- Start with the (olive) oil in a bowl, add the balsamic vinegar and the rest of the vinaigrette ingredients; mix well till the dressing thickens. There should be enough dressing to make two medium sized salads or one large one.
- In a salad bowl, put in the desired amount of dressing then add the thinly sliced onions. Mix and let sit for a few minutes.
- Add the sliced strawberries and grape tomatoes to the saturated onions, toss well together. Let sit for a couple of minutes to soak in the vinaigrette.
- Slice one half avocado, lengthwise, and chop the other half into smaller pieces.
- Add the smaller pieces to the strawberry salad, toss gently together. Place the sliced avocado to the side of your dish.
- Serve with toasted sourdough or some fresh French baguette.
