It’s the season!
I have a lot of mandarins. So, I tried a new recipe, a test. Simple & easy & cooked in a few minutes — in a frying pan.
- Peel 2 mandarins & slice in half – across the slices.
- Melt a tbsp of butter in a 6” frying pan. Add sugar (1tbsp +/-) and caramelize. Add a dash of balsamic vinegar. Mix.
- Drop in the cut mandarins, face down & remove from heat.
- While waiting for the sugar to caramelize, in a bowl, break an egg, add 1 tbsp of sugar & mix. Add 20 ml of oil, mix, add 30ml of milk, mix. With a sieve, add in 60g or 2 oz of AP flour + 2.5g baking powder. Blend.
- Return the frying pan to low heat & top the mandarin halves with the flour & egg mixture. Spread evenly, cover and let cook for approx. 8-10 minutes. Test for doneness with a toothpick or skewer.
- Once ready, flip out on a plate & cool. Serve topped with some fresh mint or basil (your preference) & a sprinkle of powdered sugar (or not!).
